I have a recipe for an amazing lowfat banana bread and I was wondering if I substituted the 1 1/2 cip of mashed banana for 1 1/2 cup of pumpkin puree-

(that’s the brand)- if it would become a lowfat pumpkin bread recipe. Here’s the recipe:
Ingredients:
•2 cups all purpose flour
•3/4 tsp baking soda
•1/2 tsp salt
•1 cup sugar
•1/4 cup butter, softened or 1/4 cup trans-fat free shortening
•2 large eggs or 1/2 cup egg substitute
•1 1/2 cups mashed ripe banana (about 3 small bananas)
•1/3 cup plain fat-free yogurt
•1 tsp vanilla extract
Preparation:
Preheat oven to 350 degrees.
Spoon flour gently into measuring cups and level with a knife. Stir flour, baking soda and salt together in a medium bowl. Put aside. Place sugar and butter in a large bowl and beat at low speed with a mixer until well blended. Add one egg at a time and blend well after each one. Add in mashed banana, yogurt and vanilla extract, beat until blended. Add flour mixture and blend until just moist. Do not over-mix. Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick cooking spray. Pour batter into pan. Bake at 350 degrees for 60-70 minutes (until a toothpick inserted in the middle comes out clean). Remove from pan after 10 minutes or so and cool on a wire rack.

Need zero-crust pumpkin pie recipe?

Just need a pumpkin pudding or custard or similar but using usual pie ingredients, but no crust at all. I tried the Libby canned pumpkin pie recipe without the crust, but I didn’t know how to make it presentable. I have the pumpkin, canned milk, eggs, etc. but I’m allergic to wheat and corn, so crust is out. Same for bread puddings. I’d be open to soup if it used the same ingredients.
Recipe ideas using pumpkin..?

i need a recipe (anything: cheesecake, bread, cake, etc) that involves real pumpkins. i tried looking it up but most recipes involve canned pumpkin…. or how can i make the pumpkin like canned one and just use it like that in the recipes?
Basic spice bread recipe?

My mom’s cookbook recently disappeared magically and so I decided to look on the internet for a basic spice bread recipe. I was amazingly surprised to see that I couldn’t find one. I found cinnamon spice bread, honey spice bread, pumpkin, zucchini, and a bunch of others, but I can’t find just a basic spice bread recipe. I also checked Martha Stewart’s website and the Sunset website. If you could post a recipe or a link to one I would be very appreciative.
Can I substitute pumpkin for the squash in this recipe?

I am making Three Sisters Stew for Samhain and I don’t have any butternut squash. Can I substitute pumpkin for it? Should I not add the garlic if I do? I am having cornbread muffins and homemade buns with it. Dessert is candy bar Cheesecake with fudge sauce. Plus I also have various cookies, quick breads and old fashioned carmel apples too.

Do you have any? I entered into a competition at work. It’s kind of like the Iron Chef. I have to use pumpkin but have not been too successful at finding recipes using pumpkin that are not the traitional. (ie. pumpkin roll, pumpkin pie, pumpkin bread etc)
Any ideas?
Thank you all for your great ideas and recipes. I’ll let you know though that between my question being posted and now, I decided on a pumpkin custard recipe. But I’ll be sure to use your ideas as well. (in the future)
