A recipe for “regalos” (pan dulce)?

I’m looking for a recipe for a type of pan dulce my mom calls a “regalo” (a gift). It may be known as something else, because pan dulce often has different names. It looks like a square cake with a pumpkin filling…it looks like they just split the cake and put a layer of pumpkin or sweet potato filling in the middle…but it may have been poured in and covered with another layer before it was baked, I don’t know how it’s made. The bread is crumbly. It’s kind of thick and dense. It’s always cut in square bars. I’ve been looking for recipes in english or spanish and haven’t had any luck…I think this type of pan dulce may be commonly known by another name.

Pumpkin Cinnamon Spice Muffins
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon allspice
3/4 cup brown sugar
1 cup canned pumpkin
1/4 cup liquid egg substitute
1/3 cup fat free milk
1/4 cup corn oil
3 ounces frozen unsweetened orange juice concentrate, thawed
vegetable cooking spray
Preheat oven to 400F. Sift together flours, baking powder, baking soda, cinnamon, cloves, nutmeg and allspice into a large bowl; add brown sugar. In a separate bowl, combine remaining ingredients, except cooking spray. Add wet ingredients to dry ingredients, stirring until just moistened. Spoon into 18 muffin cups coated with cooking spray; bake 14 minutes. Makes 18 muffins, 1 muffin each serving.

The site i got this off of says its a diabetic recipe but it has 3/4 cups of brown sugar in it. Is is still a diabetic recipe?
I need a unique dessert recipe to make for Christmas?

I have invented cheesecake recipes and have brought them and I am tired of the traditional pies (fruit and custard) Also cakes are a bore. I want to make something totally unique otherwise I will just make a crapload of different cookies.
SO just so we know due to certain tastes and frequency of these desserts that have been there done that here is what I cannot make
NO
Bread pudding (sister in law hates it)
Cake (boring)
Pie (fruit like apple, blueberry, cherry; or custard like pumpkin or cream like choc or vanilla is also boring now).
Cheesecake (have made pumpkin, peanut butter cup, raspberry amaretto and vanilla bean. It has been done to death).
Something clearly unique and delish. I cannot think of anything that will be a surprise and yummy.
Ideas?
Does anyone know how to reduce recipe to 4 or 6 servings?

Pumpkin Cheesecake
1 1/4 cup pecan finely chopped
1/4 cup dry bread crumbs fine
2 Tbs sugar
2 Tbs butter, melted
2 lbs cream cheese, softened
1 cup brown sugar, packed
2/3 cup sugar
5 lg. eggs
1/4 cup flour, all-purpose
2 tsp pumpkin pie spice
16 oz pumpkin, canned
this makes 16 servings.
This is my aunts recipe and i was just curious since she makes single servings and they are amazing and one year she made 4 and 6 serving ones. She passed away 4 months ago so i can’t ask her and this is the only cheese cake recipe she had

Pumpkin Bread
Ingredients:
3-1/2 cups all-purpose flour
3 cups sugar
2 teaspoons baking soda
1-1/2 teaspoons salt
1 teaspoon ground cinnamon
1 can (15 oz.) canned pumpkin
1 cup vegetable oil
2/3 cup water
4 eggs
1-2/3 cup (10-oz. pkg.) REESE’S Peanut Butter Chips
1 cup chopped nuts
1 cup raisins(optional)
Directions:
1. Heat oven to 350°F. Grease and flour three 8-1/2×4-1/2×2-1/2-inch loaf pans.
2. Stir together flour, sugar, baking soda, salt and cinnamon; set aside. Stir together pumpkin, oil, water and eggs in large bowl; gradually add dry ingredients, stirring until well blended. Stir in peanut butter chips, nuts and raisins, if desired. Pour evenly into prepared pans.
3. Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pans to wire racks. Cool completely. 3 loaves.

I have a “pumpkin bread” recipe that calls for:
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
BUT, I don’t have nutmeg, cloves and ginger. I DO however have some pumpkin pie spice. So my question is: How much of the pumpkin pie spice should I use to substitute the other spices?
Could I substitute apple sauce for oil in this recipe?

i have a recipe for pumpkin bread. it calls for 2 cups of solid pack pumpkin. is this the same thing as a can of pumpkins that equals to 15 oz. can? i need a answer right away.
