how to replace dried milk powder in bread machine recipes?
Mar 26th
Hello there,
I am trying to veganize more and more of my recipes.
I make my own bread in a bread machine and most of the recipes call for dried milk powder. What can I use instead? What does the milk actually DO in the making of bread. Can you just use soya milk instead of normal milk or is there some point in the normal milk? What quantity of liquid milk would replace the dried milk? For example, most recipes use 1 1/2 tablespoons of milk powder.
Please share your opinions and experiences!
Single serving friend…thanks for your answer. I live in France where I’m almost amazed that they have soy milk but if I find dried soy milk here I will cut off my arm!!
I actually wanted a replacement for my existing recipes as I have a book with loads of yummy ones

Pumpkin Bagels:
Ingredients
2/3 cup plus 2 tablespoons water (70° to 80°), divided
1/2 cup canned pumpkin
1/3 cup packed brown sugar
1 teaspoon salt
1-1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
3 cups bread flour
1 package (1/4 ounce) active dry yeast
1 egg white
1 tablespoon cornmeal
Directions
In bread machine pan, place 2/3 cup water, pumpkin, brown sugar, salt, spices, flour and yeast in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
When cycle is completed, turn dough onto a lightly floured surface. Shape into nine balls. Push thumb through centers to form a 1-in. hole. Stretch and shape dough to form an even ring. Cover and let rest for 10 minutes; flatten rings slightly.
Fill a Dutch oven two-thirds full with water; bring to a boil. Drop bagels, two at a time, into boiling water. Cook for 45 seconds; turn and cook 45 seconds longer. Remove with a slotted spoon; drain on paper towels.
Whisk egg white and remaining water; brush over bagels. Coat a baking sheet with cooking spray and sprinkle with cornmeal. Place bagels 2 in. apart on prepared pan. Bake at 400° for 15-20 minutes or until golden brown. Remove to wire racks to cool. Yield: 9 servings.

What’s your favorite bread machine recipe?
Mar 26th
Or, if you’re feeling ambitious, your favorite two or three recipes?
Requirements:
*Has to be a 1.5 lb. recipe
*Only those recipes you’ve personally tried, please.
*No extensive prep work. My favorite recipes are those that just involve throwing everything in the machine and pressing a button. I’ll chop an onion or grate a little cheese to make bread, but that’s about as far as I like to go.
*I really prefer those recipes that bake right in the bread machine (my oven isn’t always the most reliable when it comes to baking things evenly)
I know, it’s a lot of restrictions, but I know you’re all up to it! I’ve got plenty of plain old white bread/wheat bread/sourdough recipes…so something a little different would be very welcome. Be sure to include the settings and which type of yeast (regular or instant) you use. Thank you!
my bread machine cookbook calls for gluten..is that the same as wheat gluten?

thanks for the input but the recipe just says gluten…all i can find is vital wheat gluten…is that the same thing? or is it like flour where you can buy white flour or wheat flour?
Cake in a bread machine?
Mar 25th
Can I use absolutely any cake mix to bake a cake in a sunbeam bread machine? I don’t really want to start from “scratch” by getting flour etc.
I generally bake a cake in the oven by using Betty Crocker’s cake mix or something along those lines.
This website is the only one which possibly says that I could use a ready to mix cake mix in a bread machine and I wanted a second opinion:
