Question about gluten free cooking?
May 8th
My fiance and I just moved in together. He has celiac disease and he’s on a gluten free diet. I’ve never cooked gluten free. Usually he’s been the one thats been doing all the cooking but I think its time for me to learn how to cook gluten free. I have LOTS of dessert recipes. At first I was worried that I wouldn’t be able to use my recipes anymore but he told me that pretty much any recipe can be converted to gluten free. I know that I’ll need to use Xanthan gum when I bake but the question is how much would I need to use? I’m hoping somebody can help me. I’m going to post links to all the dessert recipes that I have in my collection and hopefully someone can tell me how much xanthan gum is needed for each recipe.

Is this enough food for about 25 ppl for a first birthday party?
May 6th
I am having my daughters first birthday party this saturday and I am extremely excited. I am doing it buffet style. I have a 3 crock pot in one and I am planning on doing a roast the night before shredding the meat and adding it to the crock pot the day of with gravy on low for roast beef sandwiches. I am also doing meatballs in marinara sauce. Then in the third were having nacho cheese mixed with the salsa.I will have pasta salad, potato salad, and deviled eggs as well as spinach dip with pumpernickel bread and crackers. Then I have a pumpkin pie dip with apples, pears, ginger snaps, vanilla wafers, and spice cookies for dipping. I also have a chocolate fountain with pretzel rods, marshmallows, strawberries, bananas, angel food cake, ritz crackers, and graham crackers to dip. Then of course I have my daughters smash cake with matching cupcakes for everyone. Then I will have a separate crock pot with warm apple cider as well as juice and soda.
What do you think about what I’m serving at Thanksgiving?
May 4th
I know its a little early to think about what you’ll cook/eat at thanksgiving but I’m not going trick or treating this year so I can’t wait until Thanksgiving. I love to cook so this year I’m taking over the cooking from my mom(even though she’ll probably help me a lot!)and I’m going to be making the feast this year. What do you think about the menu I put together?
Appetizer
Broccoli Cheese Soup
Biscuits
Vegetable platter(Baby Tomatoes, Celery, Carrots, and Broccoli) with Dill Dip
Main Meal
Turkey
Stuffing
Green Bean Casserole
Mashed Potatoes
Bread Pudding
Dessert
Pumpkin Pie
Apple Pie
Lemon Meringue
Chocolate Pie
Sorry its so long and its late. Tell me what you think! Not enough? Too Much??? Give me some recipes or what you normally serve at thanksgiving!
Thanks Ray:]
What to do about a morning binge?
May 2nd
Here is what I ate thus morning. A smoothie with banana, soy milk and a tablespoon of flaxseed, three slices of blueberry banana bread (it was vegan and low fat so you know I just had to have three) A brownie, and a pecan pumpkin muffin. Will I gain weight from eating all that and if I skip lunch and go to dinner will it balance out??
question about pooping in my pants?
May 1st
i usaly like to eat a lot of food for some meat and oatmeal, drinking beer or orange juice and pork sausages, beans and pumpkin bread. i am on a budget and very poor. i have a problem where i usually poop on the toilet 3 or 4 times a week maybe less, but i often have horrible stomach pains during work and class and end up pooping in my pants awful quick before i can get to the bathroom…i work in an office setting which makes this particularly embarassing because i often need to go home but cant during th eday( i live 2 hour commute away). i often find myself spending the rest of the day with feces in my pants. is there something wrong with my bladder or is my diet too weird? or do they have a kind of male diapers for this? thanks
How’s this poem about a family tradition?
May 1st
The Family Tradition
Mismatched plates by
stained linen napkins,
wide-eyed children watch
the scented candle’s flame.
Sliced pumpkin bread
and red cranberry sauce
are placed on the table,
right under their busy
snubbed little noses.
They fold their hands
knowing
ma won’t bring the platter
until each of them lists
in a sweet prayerful manner
things they’re most thankful for.
The last child shouts his “Amen”
and they clap their hands
at the good job they’ve done,
for ma served the turkey
with a most loving smile.

(that’s the brand)- if it would become a lowfat pumpkin bread recipe. Here’s the recipe:
Ingredients:
•2 cups all purpose flour
•3/4 tsp baking soda
•1/2 tsp salt
•1 cup sugar
•1/4 cup butter, softened or 1/4 cup trans-fat free shortening
•2 large eggs or 1/2 cup egg substitute
•1 1/2 cups mashed ripe banana (about 3 small bananas)
•1/3 cup plain fat-free yogurt
•1 tsp vanilla extract
Preparation:
Preheat oven to 350 degrees.
Spoon flour gently into measuring cups and level with a knife. Stir flour, baking soda and salt together in a medium bowl. Put aside. Place sugar and butter in a large bowl and beat at low speed with a mixer until well blended. Add one egg at a time and blend well after each one. Add in mashed banana, yogurt and vanilla extract, beat until blended. Add flour mixture and blend until just moist. Do not over-mix. Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick cooking spray. Pour batter into pan. Bake at 350 degrees for 60-70 minutes (until a toothpick inserted in the middle comes out clean). Remove from pan after 10 minutes or so and cool on a wire rack.
Any opinions and experience appreciated. Thanks in advance!
