Dredge chops in flour, shake off excess, dip in beaten egg, then in seasoned breadcrumbs. Fry. Coat only one at a time or coating will become soggy.
The flour makes the egg coating stick to the meat. Without the flour step, the coating comes off.

Combine bread crumbs, flour, and cheese.
Dip the pork chop into the egg, then into the bread crumb/flour/parmesan mixture.

You keep them seperate. First you dip the pork chops into the flour and shake the excess off, then into the egg mixture, and then last into the breadcrumbs. Now the parmesan cheese you add in the breadcrumbs and you can season the flour, breadcrumbs and eggs with salt and pepper. Use only one hand when doing this or it can get pretty messy.

Separate yolks from whites.
Beat yolks in one bowl.
Mix dry ingredients in another bowl.
Beat whites in a third bowl.
Dip chops in beaten yolks.
Dip chops in crumbs/flour/season/cheese mixture
Dip chops in beaten whites.
Yolks will hold coating to chops. Whites will hold coating to itself. Prevents coating from falling apart.
