Maybe you over baked it, maybe you should try a new recipe
BANANA BREAD
2 1/2 cups white or white whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening
2 cups sugar
2 cups over-ripe mashed bananas
4 eggs, beaten
1 cup chopped nuts
1 tablespoon banana liqueur or dark rum
Preheat oven to 350F.
Combine flour, baking soda and salt; stir to mix well.
In the bowl of an electric mixer, beat together shortening, sugar, mashed bananas, and eggs. When well beaten, gradually add the flour mixture while mixture is at lowest speed. Mix only until combined.
Stir in the banana liqueur or rum and the chopped walnuts, pecans, hazelnuts or macadamia nuts.
Butter and flour a loaf pan. Bake for 65-70 minutes or until cake tests done (toothpick inserted in center comes out clean).
Remove from oven and allow to sit for several minutes. Run a bread knife around edges of loaf pan to free it from sides and remove from pan. Rub the top of the still-warm loaf with a pat of butter to soften and glaze the top, if desired.
Serve with whipped cream cheese spread on each slice.

This is the one I use and it turns out great.

I add few walnuts, pecans, and raisins in my banana bread. I make bread with no bread machine. Maybe either ingredients are not in proportion or the oven is too hot. Don’t loose hope, as Einstein himself said I didn’t fail 1000 times, I found 1000 ways to do a thing wrong. Be positive, and experiment.(Altleast I do).
BANANA OAT BREAD(You can use regular Baking pan instead of bundt pan)
2 c. all purpose or unbleached flour
1 c. rolled oats (you can use nuts, instead of oats, or raisins, etc)
2 tsp. baking soda
1 c. vegetable shortening such as Crisco
2 c. sugar
2 c. mashed ripe bananas (4 to 5 med.)
4 eggs
1 c. chopped walnuts
Maple Glaze
Grease and dust with rolled oats a 2 to 2 1/2 quart bundt pan or tube pan.
Cool in pan 5 minutes. Turn out onto rack to cool completely. Drizzle Maple Glaze over bread. Makes 12 to 14 servings.
1)Heat oven to 350 degrees.
2)Mix all the dry ingredients[Oats, flour, baking soda, raisins(if you want to)] together.
3) Mix eggs, bananas, walnuts
4)Thoroughly blend them
5)Pour them in the pan.
6)Bake in 350 degree oven for 1 hour and 20 minutes or until pick inserted into center comes out clean.
7)Meanwhile, prepare glaze.
MAPLE GLAZE: (Optional)
1 cup powdered sugar, 1 tablespoon lemon juice, 1/2 teaspoon maple flavoring and water. In bowl, combine powdered sugar, lemon juice and maple flavoring. Gradually stir in enough water to make an icing of smooth, pourable consistency.
